Winter Pudding
2 cups milk or soymilk
¼ cup each, dark molasses and cornmeal
3 tbsp. firmly packed light brown sugar
2 large egg whites
1 tbsp. butter (or Smart Balance), melted
½ tsp. ground cinnamon
1/8 tsp. salt
¼ cup raisins
Preheat
oven to 300°F.
Combine
the milk and molasses in a medium saucepan.
Stir in the cornmeal and cook, stirring constantly, over moderate heat
for 5 to 6 minutes or until thick.
In
a medium-size bowl, combine the egg whites, brown sugar, butter, cinnamon, and
salt. Stir into the cornmeal
mixture. Stir in the raisins.
Pour mixture into an 8-inch baking dish.
Bake for 45 minutes.
Serve
warm, with whipped cream.
