Low-Fat Pumpkin Tofu Pie
Preheat oven to 350 degrees. Blend until creamy in blender or food processor: 
1 1/2 packages Mori-Nu Extra Firm silken tofu.

Add and blend till very smooth and creamy:
2 c. cooked pumpkin 
2/3 c. maple syrup or honey
1 tsp. vanilla 
1 1/2 tsp. cinnamon
1/2 tsp. nutmeg 
1/8 tsp cloves
1/4 tsp. ginger

Pour into a 9" unbaked pie shell. 
Bake about 1 hour.
