Spinach Salad
1 lb. spinach leaves, washed and dried
1 red pepper, thinly sliced into rings
1 small red onion, thinly sliced into rings
1-2 Tablespoons extra virgin olive oil
Juice of one lemon
Combine spinach, red pepper and red onion in salad bowl. Drizzle olive oil over salad; toss, squeeze lemon juice over salad; toss again.
