Mango Tango Salsa
1 medium sized mango, peeled, seeded, and diced
½ cup chopped onion or scallion
½ cup diced red pepper
¼ cup coarsely chopped fresh cilantro
2 Tablespoon freshly squeezed lime juice
1 Tablespoon finely chopped seeded jalapeno pepper,
or more to taste
In a large bowl, combine all ingredients. Toss to mix.
Let stand at room temperature for 15 minutes to blend flavors.
Enjoy with baked tortilla chips, on black bean burritos, enchiladas, or grilled chicken or fish.
