Lime Cream

Makes 1 1/2 cups

 

1/2 package firm or extra-firm silken tofu

1/2 cup plain, non-fat yogurt

1/4 cup honey

1/4 cup freshly squeezed lime juice

Finely grated zest of one lime

Blend all ingredients in blender until smooth and creamy. Serve drizzled over fresh fruit or angel food cake.
