Jalapeno-Spinach Salsa

3 cups

3 cup spinach, finely chopped

1/2 cup fresh cilantro leaves, finely chopped

3 cloves garlic, minced

5 scallions, thinly sliced

1 -3 jalapenos, seeded & diced

1 lime, juiced

1/2 teaspoon sea salt

 

Mix all ingredients together in a bowl. Delicious served on burritos, black beans, quesadillas, grilled or stir-fried vegetables, or rice. It can also be served with baked corn chips or warmed corn tortillas.
