Greek Bean Salad

 

2 (15-oz.) cans Great Northern (or other) white beans, rinsed and drained

2 medium cucumbers or one long English cucumber

1 basket cherry or small plum tomatoes, halved or quartered

1 cup diced red onion

1/2 cup thinly sliced basil

1 jar roasted red pepper, cut into strips

4 oz. cubed low-fat Feta cheese

 

Dressing

1/4 cup freshly squeezed lemon juice

2 Tablespoons extra virgin olive oil

1 clove garlic, minced

1 teaspoon sugar

1 teaspoon dried oregano

1 teaspoon pepper

1/4 teaspoon salt

2 garlic gloves, minced

1/2 cup finely chopped red onion

Lettuce leaves

 

Combine salad ingredients in a large bowl. Combine dressing ingredients in a small bowl; stir well. Pour over salad and combine gently. Serve over lettuce leaves.
