Fruited Quinoa Salad

1 cup quinoa
2 cups water
½ cup golden raisins
¼ cup walnut oil
3 scallions, white bulb and 3 inches green, sliced
½ cup unsalted roasted peanuts
½ cup mangoes, peaches or fruit of your choice
2 tbsp. fresh mint leaves, chopped
2 tsp. grated orange zest

 

Combine quinoa and water in a large saucepan and bring to a boil. Reduce heat, cover and simmer for 10 minutes. Add raisins and continue cooking until all liquid has evaporated, about 5 minutes. Remove pan from heat and spread the mixture on a baking sheet. Let it cool completely.

In a large bowl, combine quinoa and raisins with remaining ingredients. Toss gently and serve. Serves 4. Best served at room temperature.
