Black Bean Salsa
2 16 oz can black beans, drained
1 cup chopped tomatoes
¾ cup chopped green peppers
2 chopped jalapenos, optional
½ cup chopped red onions
½ cup chopped fresh cilantro
3 Tbs lime juice
1 Tbs olive oil
1 ½ tsp minced garlic
In a bowl combine the black beans, tomatoes, green peppers, onions, and cilantro. In a small bowl whisk together lime juice, olive oil, and garlic; pour over the bean mixture and toss to combine.
